A Valentine’s Delight: Mango Custard Egg Roll

Happy Valentine’s Day!!!

Here’s a special recipe that can literally be whipped up within minutes in your Thermomix, for you and your loved one.

My family really enjoys my egg roll recipes, and since I first made this, we have then made egg rolls on a number of occasions with a variety of different custards and fruit.

I believe that even on special occasions, food that speaks love to the heart, should also be a gift of nourishment to our bodies.

Not only can clean, nutrient-dense foods be prepared in an extremely enjoyable way, eating this way also helps balance your blood sugars (especially with the substantial addition of high-quality beneficial fat sources to your meal – i.e. avocadoes, coconut cream, organic pastured ghee/butter), allowing you to be more fully present with those you love, as you spend time together throughout the day after your meal.

A Valentine's Delight: Mango Custard Egg Roll
Instructions
Meringue Egg Roll Layer
  1. Preheat oven to 160c.
  2. Oil a piece of unbleached baking paper with a thin layer of cold-pressed coconut oil. Before you start, make sure your mixing bowl is clean and dry. This is really important!
  3. Place egg whites and pinch of pink salt in Thermomix bowl. Insert Butterfly. Beat for 3 minutes / 50C / speed 4.
  4. Beat for another 2.5 minutes / 50C / speed 4 whilst while gradually adding in the remaining ingredients.
  5. Spoon the mixture evenly onto the baking tray and smooth the top, maintaining a rectangular shape that is wide enough to roll into a log.
  6. Bake for 15-20 minutes, or until light golden and firm, then leave to cool completely. You can start making the custard right after placing the meringue in the oven 🙂
Custard Filling
  1. Place all the ingredients into the Thermomix bowl and cook for 7 mins/90C/speed 4. Allow to cool.
Your Final Step - The Assembly!
  1. Blend cooled custard at speed 7 for 10s right before assembling.
  2. Place cooled meringue sheet on a piece of plastic wrap.
  3. Choose if you would prefer to roll it length-wise or width-wise, then spoon a thin layer of custard on, towards the middle of the meringue. Spread the diced mango over it.
  4. Place in the fridge for 5 minutes to set for ease of rolling.
  5. Remove from the fridge, roll the roulette and leave in plastic wrap for 30 minutes or longer. When you are ready, slice, serve and enjoy 🙂 May you have a memorable and wonderful Valentine's Day!!!
