This is his simple, delicious recipe for what we have named Better-Than-Store-Bought Battered Fish, that we wanted to share with you.
Unlike most store-bought battered fish that causes inflammation through the flours & oils they use, we consider ours anti-inflammatory as it involves cassava & arrowroot flour, and frying in coconut oil that has a plethora of benefits for our bodies.
We often like to use up any leftover flour mix by making onion chips or pancakes to go on the side 😄
Better-Than-Store-Bought Battered Fish
Melt coconut oil in your pan (we used a cast iron one).
Mix the flours, salt, and spices in a large bowl.
Dip fish pieces into the mixture to coat evenly. Do not worry about patting dry the fish, as the moisture serves to bind the flours to the fish.
When the oil begins to shimmer, place a few pieces of fish into the pan, making sure there is no crowding. Fry for a few minutes till browned and crispy on the bottom, then flip and cook the other side for a few minutes till the same.
Remove from heat and let cool, then repeat steps 3 & 4 till all your fish is cooked.
Let cool & serve with organic lemon wedges on the side.
