Lemon Shortbread Bars (AIP, Egg-free)

These delicious lemon shortbread bars have become the most recent hit in my family!

With lots of lemons in our fridge at the moment & reserved lemon zest from every lemon I juice, I decided to look into making a lemon-based functional snack for our family. The shortbread base is something I developed unintentionally, playing with coconut oil to flour ratios, and as soon as my husband and I tasted it, we were hooked 😆🙌

I have been finding as many places as I can to include homemade organic, pasture-fed bone broth in our diet, because I love its plethora of benefits! To do so, I cook a constant supply of basic bone broth in my Vitaclay, with just beef marrow bones, a tbsp of apple cider vinegar, and a pinch of pink salt. This ensures I can easily use it in both my savoury and sweet recipes.

This lemon bar recipe is egg-free, and an easy one to make vegan-friendly for all my vegan friends! 😉💌

Shortbread Base
  1. Preheat oven to 150c.
  2. Stir all the ingredients together in a bowl till well-combined, and press into a baking tin lined with unbleached, chlorine-free baking paper. Bake for 30 minutes or till slightly browned.
  3. Pull out of oven and allow to cool.
Lemon Filling (Thermomix)
  1. Blend on speed 7 for 10s. Leave to cook and thicken at 90c/11 minutes/speed 1 Blend on speed 8 for 8s to combine again.
  2. Pour into baking tin on top of the shortbread crust, and allow to set in the fridge for 3 hours or until set. Enjoy!
Lemon Filling (Without Thermomix)
  1. Put all ingredients into a small saucepan, and stir while heating on medium heat till gelatine powder is dissolved. Simmer for 5 minutes to allow the mixture to thicken
  2. Blend for a few seconds in a high speed blender to combine.
  3. Pour into baking tin on top of the shortbread crust, and allow to set in the fridge for 3 hours or until set. Enjoy!
