Recently, I was shopping at Kunara, and felt so excited when I came across certified organic fresh lemongrass!
I developed this recipe while deciding how to best make use of my find, and it was a winner at dinner with my family. My husband declared these may very well be “the best meatballs I have ever tasted” 😄
I hope you enjoy them just as much as we did!
Put lemongrass stalks, ginger, and garlic in a high speed blender, and blend finely.
Mix blended herbs with the rest of the ingredients, and stir till evenly distributed
Leave to sit for 2-3 hours, or if possible for maximum flavour, overnight in the fridge.
When you are ready, preheat the oven to 180c.
Shape the mixture into meatballs, and fry them on medium heat for a few minutes on each side, till they are mostly browned and holding their shape well.
Transfer the meatballs to a baking tray on baking paper (my preferred brand is 'if you care'), and bake for 10-15 minutes or until cooked through.
