Lemongrass Meatballs

Recently, I was shopping at Kunara, and felt so excited when I came across certified organic fresh lemongrass!

I developed this recipe while deciding how to best make use of my find, and it was a winner at dinner with my family. My husband declared these may very well be “the best meatballs I have ever tasted” πŸ˜„

I hope you enjoy them just as much as we did!

  1. Put lemongrass stalks, ginger, and garlic in a high speed blender, and blend finely.
  2. Mix blended herbs with the rest of the ingredients, and stir till evenly distributed Leave to sit for 2-3 hours, or if possible for maximum flavour, overnight in the fridge.
  3. When you are ready, preheat the oven to 180c. Shape the mixture into meatballs, and fry them on medium heat for a few minutes on each side, till they are mostly browned and holding their shape well.
  4. Transfer the meatballs to a baking tray on baking paper (my preferred brand is 'if you care'), and bake for 10-15 minutes or until cooked through. Enjoy!

      I didn’t realise that was the case as I use Chrome as my browser, so I really appreciate your feedback. Not sure what to do at the moment but I will keep this in mind, and hopefully come across a solution soon!

    1. Are you referring to Kunara? I do appreciate its fully organic cafe menu, as well as its great selection of certified organic produce – especially with regards to herbs and edible flowers that can often be difficult to source elsewhere πŸ™‚
