My husband loves meringue and pavlova, so this Christmas, it has been my aim to experiment in this direction to create sweet treats that he enjoys.
I did not know if it would be possible to make these cookies without a large amount of of fructose-laden, albeit natural, sweeteners. However, I am really pleased to share that I have done it, and my husband loves what I have made, 3 days before Christmas!!!
His description of what we have named Honeycomb Meringue Stars, is as if crunchy fairy floss & pavlova had a baby 😉🌠
If you do not have a Thermomix, I’m sure you could easily use a stand mixer for the meringue instead
