Low-fructose Honeycomb Meringue Stars (Paleo, AIP)

My husband loves meringue and pavlova, so this Christmas, it has been my aim to experiment in this direction to create sweet treats that he enjoys.

I did not know if it would be possible to make these cookies without a large amount of of fructose-laden, albeit natural, sweeteners. However, I am really pleased to share that I have done it, and my husband loves what I have made, 3 days before Christmas!!!

His description of what we have named Honeycomb Meringue Stars, is as if crunchy fairy floss & pavlova had a baby πŸ˜‰πŸŒ 

If you do not have a Thermomix, I’m sure you could easily use a stand mixer for the meringue instead

Low-fructose Honeycomb Stars (Paleo, AIP)
Instructions
  1. Preheat oven to 100c.
  2. Insert Butterfly into clean and dry mixing bowl.Place all ingredients in, and whip speed 3.5/3-4minutes with MC removed, until strong peaks form.
  3. Bake 2 1/2 - 3 hours, making sure to keep oven door closed through entire time period. After switching off the oven, do not open & leave the cookies for an additional 3 hours before opening the oven door. Enjoy!
