Orange-Infused Crispy Chicken with an Avocado & Mango Salad
Marinate chicken thigh pieces in spice mix, overnight preferably.
Mix flours and salt together. Coat thighs & fry in coconut oil, till cooked through and crispy. Set aside to cool.
Blend all ingredients at speed 7/20s.
Cook 90c/5 minutes/Speed 3 till sauce is thickened.
Alternatively, without a Thermomix, process the ingredients in a high-speed blender, then simmer on a stovetop in a pot till thickened.
Avocado and Mango Salad
Mix all ingredients together, and gently toss with oil and sauces.
