Rosemary & Garlic Beetroot Fritters

Mmm… Crispy on the outside and moist on the inside, these fritters are the perfect balance of salty & sweet!

Given how flavourful they are, these could be delicious as a burger or sandwich filling, or eaten simply by themselves. My son and I had ours wrapped as a handroll with sliced avocado in organic seaweed sheets for lunch yesterday, while my husband had his open-faced with avocado on the side. I had the last fritter that was leftover on the side of my dinner, and really enjoyed it 😍

So, this recipe is a keeper for us πŸ™Œ

I personally don’t eat much dairy, except for organic, 100% pastured butter, and the occasional organic cheese, so I am considering replacing the feta in this recipe with marinated organic tempeh the next time I make it. If that tastes amazing, I’ll update this post to let you know πŸ˜‰

Thermomix
  1. Blend onion, garlic, rosemary & beetroot on speed 8/10s, till finely grated.
  2. Add remaining ingredients, and mix speed 6/20s till evenly combined. Let rest in the fridge for 20-30 minutes for quinoa flakes to absorb the liquid.
  3. Melt coconut oil in a pan on medium high heat, till hot and shimmering, then form fritters of your desired shape and size with a spoon on the pan. Let sit for 3-4 minutes or till browned and firm on the bottom, then flip and cook for another 2-3 minutes. Remove and let cool before eating. Enjoy!
Without Thermomix
  1. Blend onion, garlic, rosemary & beetroot in a high speed blender till finely grated.
  2. Pour into a bowl and mix remaining ingredients in. Leave to sit in the fridge for 20-30 minutes for quinoa flakes to absorb the liquid.
  3. Melt coconut oil in a pan on medium high heat, till hot and shimmering, then form fritters of your desired shape and size with a spoon on the pan. Let sit for 3-4 minutes or till browned and firm on the bottom, then flip and cook for another 2-3 minutes. Remove and let cool before eating. Enjoy!
