Simple, Creamy Zucchini Soup (with Thermomix instructions)

Wow! I am impressed at how flavourful, yet easy to make this soup is!

We had a few large organic zucchinis to use up today, but the idea of cooking them in a stir-fry like I have often done just did not appeal to me , so I thought of making a soup instead.

Voila! Our mid-day meal was made in 15 minutes, with little involvement on my part, because of how simple this recipe is. I then threw on some organic Konjac noodles that my son loves, and lunch was ready πŸ˜„

My entire family (including 7 month old Serenity-Light) devoured this soup. I hope you enjoy it too! x

Thermomix
  1. Blend onion and garlic speed 7/7s.
  2. Add zucchini and blend speed 8/7s.
  3. Add in bone broth and gelatine, and cook Varoma/15 minutes/speed 1.
  4. Add the rest of the ingredients, and blend speed 9/30s. Enjoy!
Without Thermomix
  1. Put onion, garlic, zucchini, bone broth and gelatine in a pot, bring to boil, and let simmer for 15 minutes.
  2. Pour the mixture and the remaining ingredients into a high speed blender, and blend till smooth. Enjoy!
