Wow! I am impressed at how flavourful, yet easy to make this soup is!
We had a few large organic zucchinis to use up today, but the idea of cooking them in a stir-fry like I have often done just did not appeal to me , so I thought of making a soup instead.
Voila! Our mid-day meal was made in 15 minutes, with little involvement on my part, because of how simple this recipe is. I then threw on some organic Konjac noodles that my son loves, and lunch was ready 😄
My entire family (including 7 month old Serenity-Light) devoured this soup. I hope you enjoy it too! x
